Kroglabbet (The Restaurant Lab) is an MFA Embedded Design project exploring how cafés and restaurants can become more accessible by questioning the norms and assumptions that shape everyday hospitality. Developed through co-design with people with visual impairments, disability organisations and hospitality actors, the project translates lived experiences of exclusion into practical changes that businesses can implement and maintain. Kroglabbet looks at accessibility across information, staff/service routines and public communication, with outcomes including accessible digital menus and websites, the scenario-based Inclusive Service Trainer, the Who Let the Dogs In? guide-dog campaign, and educational formats for future hospitality professionals. Several interventions were implemented in real cafés and restaurants, moving the project beyond critique and into everyday practice. At its core, Kroglabbet asks how hospitality can be designed around human diversity rather than an imagined “average guest,” while shifting responsibility for access from individual guests towards the systems and people shaping the experience.
